Two flavors of gelatin go into this one: lime and lemon, dissolved in boiling water. While the mixture is still hot, everything else gets stirred in. Cream cheese melts into the warm liquid and creates a rich, opaque base. Three tablespoons of prepared horseradish cut right through that sweetness with a sharp, sinus-clearing bite.

Crushed pineapple (juice and all) adds fruity tang, while pimentos bring a pop of color and gentle pepper flavor. The sweetened condensed milk makes the whole thing creamy and smooth once it sets. Chopped nuts give every bite some crunch.

Pour it into a 9×13 and let the fridge do the rest. No cooking, no baking, just patience while it firms up.

Chef Tips

  • Let the Jello cool slightly before adding cream cheese. If the liquid is at a rolling boil, the cream cheese can curdle instead of melting smoothly. Give it 2-3 minutes off the heat.
  • Use prepared horseradish, not horseradish sauce. The sauce has mayonnaise and other fillers that water down the flavor. You want that raw, sharp bite.
  • Finely chop the nuts. Big chunks throw off the texture of a smooth gelatin salad. Pecans or walnuts both work well here.
  • Give it a full 3-4 hours to set. Overnight is even better. The condensed milk and pineapple juice add a lot of liquid, so this one needs extra time to firm up completely.

Variations

  • Swap lime Jello for orange to pair more naturally with the pineapple and make the horseradish less dominant.
  • Fold in ½ cup of whipped cream just before pouring into the dish for an even lighter, fluffier texture.
  • Add ½ cup of finely diced celery for extra crunch and a more traditional congealed salad feel.

Directions

Dissolve jello in boiling water.

Add other ingredients and mix well.
