This is a warming drink that splits the difference between hot tea and mulled cider. The base is simple black tea brewed strong, then sweetened with honey and stretched with unsweetened apple juice. The result tastes more sophisticated than either drink alone.

Use a strong black tea like English Breakfast, Assam, or Earl Grey. Lighter teas (green, white, oolong) get lost against the apple juice sweetness. The bold tannins in a sturdy black tea hold up to the fruit and balance the honey beautifully.

Unsweetened apple juice is essential. Sweetened or apple drink products will turn this cloying. The honey provides the right amount of sweetness, and the apple juice should contribute apple flavor and natural fruit sugar without piling on more.

The lemon slice garnish is small but matters. The bright citrus oils released as you sip cut through the sweet apple-honey base and keep the drink from feeling heavy. Don’t squeeze the lemon, just let it float.

Serve in clear glass mugs to show off the warm amber color. This drink looks as inviting as it tastes.

Bartender Tips

  • Don’t boil the tea once steeped. Boiling tannins gives a bitter astringent edge that overwhelms the apple flavor.
  • Add the honey after removing tea bags so the natural enzymes in raw honey aren’t destroyed by extended heat.
  • Brew the tea slightly stronger than usual since the apple juice will dilute the flavor when added.
  • Make a big batch in a slow cooker for parties and keep it warm on low for 2 to 3 hours.

Variations

  • Add a cinnamon stick and 2 whole cloves to the brewing tea for a chai-style version.
  • Spike adult portions with 1 ounce of bourbon, dark rum, or apple brandy per cup.

Directions

In a 2-quart pot, brew tea bags in boiling water.

Remove tea bags, add honey and apple juice.
