Ingredients

1/4 cup wheat bran
3 tablespoons water boiling
1/4 cup egg whites
1/4 cup milk, skim
2 tablespoons brown sugar packed
2 tablespoons vegetable oil
2 tablespoons honey
2/3 cup flour, all-purpose
1 1/2 teaspoons baking powder
1 x salt

Directions

Heat oven to 400 F.

Spray bottoms of 6 medium muffin cups, 2 1/2" x 1 1/4" with nonstick cooking spray, or line with paper baking cups.

Mix wheat bran and boiling water; reserve.

Beat milk, brown sugar, oil, honey and egg whites in medium bowl.

Stir in bran mixture and remaining ingredients just until flour is moistened (batter will be lumpy).

Divide batter evenly among muffin cups (cups will be about 3/4 full).

Sprinkle with sugar if desired.

Bake about 20 to 25 minutes or until golden brown.

Immediately remove from pan.

Fresh Asparagus-Shrimp Rice

Loved it!Easy and quick to make. I used long grain basmati rice. To eat it with chopstix though I would suggest using short grain stickeir rice.
