Mud pie is the Mississippi-born frozen dessert that became a steakhouse staple in the 1970s. Coffee ice cream sits over a chocolate cookie crust, gets blanketed with cold fudge sauce, and freezes solid into a sliceable, rich-as-mud showstopper.

Use Famous Chocolate Wafers if you can find them. Their crispness and slight bitterness give the crust a more sophisticated chocolate flavor than Oreos, which can taste sweet and one-note in this context. Crush them in a zip-top bag with a rolling pin for the most uniform crumb.

Let the coffee ice cream soften just enough to spread, around 10 minutes on the counter. Too soft and it melts into the crust, mixing the textures and turning everything mushy. Too hard and you’ll tear the crust trying to spread it.

The fudge sauce trick is counterintuitive: chill it, don’t warm it. Cold fudge sauce holds its shape on top of the ice cream and freezes into a chewy, almost taffy-like layer. Warm sauce melts the ice cream beneath and ruins the layers.

The full 10 hours in the freezer is what lets the flavors meld and the layers firm up enough to slice clean wedges. Cut corners and the pie will collapse into a slumpy mess on the plate.

  • Run a long knife under hot water and wipe dry between each cut for clean slices.
  • Toast the slivered almonds in a dry skillet before garnishing for nuttier flavor.
  • The whipped cream topping should go on right at serving, not before freezing.

  • Swap coffee ice cream for chocolate ice cream or a half-and-half blend.
  • Add a layer of crushed Heath bar between the ice cream and the fudge for toffee crunch.
  • Use a chocolate cookie crust with crushed Oreos and add 2 tablespoons espresso powder to the fudge sauce.

Directions

Crush wafers and add butter, mix well.

Press into 9 inch pie plate.

Cover with soft coffee ice cream.

Put into freezer until ice cream is firm.

Top with cold fudge sauce (it helps to place in freezer for a time to make spreading easier).

Store in freezer approximately 10 hours.

Presentation: Slice mud pie into eight portions and serve on a chilled dessert plate with a chilled fork.

Top with whipped cream and slivered almonds.
