Hobo buns are the ultimate no-fuss lunch. Kaiser rolls loaded with bologna, sliced tomato, green pepper rings, and cheese, then zapped in the microwave just long enough for the cheese to melt and everything to warm through.

A quick spread of mayo and mustard on both cut sides of the roll gives each bite a tangy, creamy base. The green pepper ring adds a fresh crunch that cuts through the richness of the melted cheese and bologna.

Kitchen Tips

  • Use sturdy kaiser rolls or hard rolls that won’t go completely soft in the microwave. Thin sandwich bread turns soggy.
  • Watch the microwave closely. You want the cheese just starting to melt, not fully liquefied. Overdoing it makes the roll tough and rubbery.
  • Slice the tomato thin so it heats through quickly and doesn’t make the bun soggy.

Variations

  • Swap bologna for ham or salami for a different deli flavor.

Directions

Mix mayonnaise and mustard; spread over cut sides of rolls.

Place bottom halves of rolls on serving plate.

Top with bologna, tomato, green pepper, cheese, and top halves of rolls.

Microwave uncovered on high (100%) until cheese begins to melt, 1 to 1½ minutes.
