If you love magic bars, these cookies take the same combination of graham cracker, coconut, sweetened condensed milk, and chocolate chips and bake them into soft, chewy drop cookies. Same irresistible flavors, portable cookie form.

Graham cracker crumbs replace most of the flour, which gives these a honey-graham sweetness and slightly sandy texture you won’t get from a standard cookie. Only half a cup of actual flour goes in, just enough to give them structure.

Sweetened condensed milk replaces eggs and most of the sugar. It binds the dough, adds caramel sweetness, and creates chewy edges that get slightly crispy and golden at the bottom.

Stirring by hand instead of using a mixer is intentional. These come together quickly and hand mixing keeps you from overworking the dough, which would make them tough rather than tender.

Pro Tips

  • Drop by tablespoons and don’t flatten. These spread on their own and flattening makes them too thin and crispy.
  • Pull them at 9 to 10 minutes when they’re just golden brown. The sweetened condensed milk means they go from golden to burnt fast.
  • Let them cool on the pan for a few minutes. They’re very soft right out of the oven and need time to set before moving.
  • Use softened, not melted, margarine. Melted fat changes the texture and makes the cookies greasy and flat.

Variations

  • Butterscotch version: Swap the chocolate chips for butterscotch chips for a warmer, toffee-like sweetness that pairs beautifully with the coconut.
  • Nut-loaded: Fold in chopped walnuts or pecans with the chips for added crunch and a more magic-bar-like texture.

Directions

Preheat your oven to 350℉ (180℃).

In a mixing bowl, mix graham cracker crumbs, flour and baking powder together.

In a large bowl, stir by hand, softened margarine and sweetened condensed milk and margarine until smooth and creamy.

Add the graham cracker mixture; mix well.

Stir in coconut and chocolate chips.

Drop by tablespoons onto a lightly sprayed pan. Bake 9 to 10 minutes or until golden brown. Cool.
