Cold brewing herbal tea overnight changes the game. No boiling water, no bitterness, no fuss. Just drop flavored tea bags into a gallon of filtered water, stick it in the fridge, and let time do the work.

The overnight steep extracts flavor gently and slowly, which means you get a smoother, more mellow tea without the harsh tannins that hot brewing pulls out. Peppermint comes out crisp and cooling. Strawberry tastes naturally fruity. Lemon stays bright without turning sour.

Filtered water makes a noticeable difference here since there’s nothing to mask off-flavors. Chlorine and mineral tastes from tap water show up loud and clear in a cold brew where the tea flavor is more delicate.

Sweeten to your taste after steeping. The tea is naturally mild, so a little sugar or honey goes a long way.

Kitchen Tips

  • Use a glass pitcher rather than plastic. Glass doesn’t absorb flavors from previous batches.
  • Three tea bags per gallon gives a medium-strength brew. Add a fourth if you like it stronger.
  • Remove the tea bags after 8 to 12 hours. Leaving them indefinitely can make even herbal tea taste slightly astringent.
  • This keeps well in the fridge for 3 to 4 days.

Variations

  • Mix tea flavors: one peppermint and two strawberry bags make an excellent berry-mint blend.
  • Sweeten with honey or agave instead of sugar for a different sweetness profile.
  • Add fresh fruit slices (lemon wheels, strawberry halves, or cucumber) to the pitcher for a spa-water twist.
