75 minThis lighter cheesecake delivers all the creamy satisfaction of traditional versions but uses cottage cheese and neufchatel instead of full-fat cream cheese. Blending the cottage cheese until silky smooth is the secret to eliminating any graininess. Top with fresh strawberries or blueberries for a dessert that feels virtuous.
Kitchen Tips
- Blend cottage cheese until completely smooth (any lumps will show in the final texture)
- The center will look slightly soft when done but firms up as it cools (don’t overbake)
- Loosen the springform rim while still warm to prevent cracking as it cools
