Ingredients

2 cups potatoes frozen diced or shredded
1/2 cup onion chopped
1/4 each green bell pepper medium, cut into 1" thin strips
1/4 each sweet red bell pepper or yellow bell pepper, medium, cut into 1" thin strips
2 teaspoons vegetable oil
1 can spam cut into julienne strips (12 oz)
1 can egg product fat-free, frozen or thawed, or 4 ea eggs
1/4 teaspoon basil dried
1/8 teaspoon salt
1/8 teaspoon black pepper
6 red hot pepper sauce (eg. Tabasco)
1/4 cup cheddar cheese shredded

Directions

In large non-stick skillet, cook potatoes, onion, and peppers in oil over medium-high heat 5 minutes, stirring constantly.

Add SPAM; cook and stir 5 minutes.

In small bowl, combine egg product, basil, salt, pepper, and hot pepper sauce; blend well.

Pour over mixture in skillet.

Cover. Cook over medium-low heat 8-12 minutes or until set.

Sprinkle with cheese; remove from heat.
