| 2 | cups | potatoes | frozen diced or shredded |
| 1/2 | cup | onion | chopped |
| 1/4 | each | green bell pepper | medium, cut into 1" thin strips |
| 1/4 | each | sweet red bell pepper | or yellow bell pepper, medium, cut into 1" thin strips |
| 2 | teaspoons | vegetable oil | |
| 1 | can | spam | cut into julienne strips (12 oz) |
| 1 | can | egg product | fat-free, frozen or thawed, or 4 ea eggs |
| 1/4 | teaspoon | basil | dried |
| 1/8 | teaspoon | salt | |
| 1/8 | teaspoon | black pepper | |
| 6 | red hot pepper sauce (eg. Tabasco) | ||
| 1/4 | cup | cheddar cheese | shredded |
In large non-stick skillet, cook potatoes, onion, and peppers in oil over medium-high heat 5 minutes, stirring constantly.
Add SPAM; cook and stir 5 minutes.
In small bowl, combine egg product, basil, salt, pepper, and hot pepper sauce; blend well.
Pour over mixture in skillet.
Cover. Cook over medium-low heat 8-12 minutes or until set.
Sprinkle with cheese; remove from heat.
