The key is the freezing technique. Center-cut slices freeze cleaner than scrap pieces because they’re uniform thickness and won’t develop the dry, crusty edges that cheaper end-cuts get when reheated.
Thaw completely in the fridge before reheating. Heating ham from frozen creates uneven hot and cold spots, and the meat dries out around the edges before the center warms through.
Kitchen Tips
- Lay slices flat in the freezer bag in a single layer, separated by parchment squares. Stacked slices freeze together into a brick that’s hard to separate later.
- Press the air out of the bag before sealing. Freezer burn is the enemy of frozen ham, drawing moisture out and leaving leathery patches.
- Label the bag with the date. Cured ham keeps about 2 months in the freezer at peak quality. After that the texture goes mealy.
