Ham and turkey hash with sweet potato, apple, and red bell pepper, blanketed in a peppery cheddar cheese sauce and broiled bubbly. Great leftover ham rescue.

1 hrsThis is leftover magic. Ham, smoked turkey breast, and sweet potato get skillet-crisped, then a sharp cheddar cheese sauce spiked with hot pepper sauce gets spooned over the top and broiled golden.
The sweet potato is the anchor. Its caramelized edges and pillowy centers keep the hash from tasting like a thrown-together leftover plate.
Adding apples and scallions right at the end is the smart move. They stay crisp against the tender meat and soft potatoes, hitting you with a sweet-sharp pop in every forkful.
Building the sauce separately and pouring it over at the finish keeps the cheese from breaking during the long saute. A rushed melted-cheese-on-top approach never sets up with the same silky texture.
Chef Tips
- Cut the sweet potato into even half-inch chunks. Anything bigger and the centers stay raw before the outsides crisp.
- Don’t crowd the skillet, work in batches if needed. Crowded sweet potato steams instead of browns.
- Leave the apple dice on the larger side and add them only in the last 2 to 3 minutes. You want bite, not applesauce.

Directions
In small saucepan over medium heat, melt margarine; stir in flour.
Add milk; bring to boil, stirring frequently.
Reduce heat to low; simmer about 2 minutes until thickened, stirring frequently.
Remove from heat; stir in cheese and red pepper sauce until cheese is melted and mixture is smooth.
Set sauce aside, covered.
In skillet over medium heat, heat oil; add browned and almost tender.
Meanwhile, heat broiler.
To skillet add ham, turkey and red bell pepper; cook 6 to 8 min.
Gently stir in apples and scallions; cook 2 to 3 minutes until apples are tender but still crisp.
Spoon reserved cheese sauce over hash in skillet; broil, about browned.
