60 minThis traditional African groundnut stew balances sweet and savory with chunks of tender sweet potato swimming in a rich, nutty tomato broth. The peanut butter adds protein and creates an incredibly creamy base that coats every vegetable. It’s vegetarian comfort food that’s both filling and exotic.
Kitchen Tips
- Use natural peanut butter without added sugar for authentic flavor depth
- Don’t skip the okra (it thickens the stew and adds traditional texture)
- Simmer on a heat diffuser to prevent scorching the peanut butter base
- Serve over rice or with crusty bread to soak up every bit of the sauce
