Grilled ham and Swiss sandwich loaded with sweet caramelized onions, tart Granny Smith apple, and a brush of Dijon glaze on crusty sourdough. The contrast of sharp cheese, salty ham, and crisp apple makes every bite layered.

This grilled ham and cheese gets its upgrade from three ingredients that transform a lunchbox standard into something worth lighting the griddle for: slow-cooked caramelized onions, a thin brush of Dijon glaze, and crisp slices of Granny Smith apple.

The sourdough is the anchor here. Its tang stands up to the salty ham and nutty Swiss cheese, while the sturdy crumb keeps things from going soggy under the fillings. Brushing the outside with oil instead of buttering is the move that gives you that deep, even golden crust.

Resist the urge to press the sandwich while it grills. Gentle heat and patience let the Swiss melt all the way through before the bread gets too dark.

Pro Tips

  • Caramelize onions in advance, they keep up to 5 days in the fridge and deepen in flavor overnight.
  • Slice apples thin so they soften slightly from residual heat without turning the bread soggy.
  • Medium-low heat is key, high heat burns the bread before the cheese melts.
  • Swap Dijon for a honey mustard if you want more sweetness to balance the sharp cheese.

Variations

  • Use smoked Gouda or sharp cheddar in place of Swiss.
  • Add a few fresh thyme leaves or baby arugula between the apple and cheese.
  • Swap ham for thinly sliced turkey or prosciutto.

Spread mayonnaise on 1 slice per sandwich.

Layer ¼ of the onion and ham, a layer of apple slices, a slice of cheese on mayonnaise slice, and top with remaining slice of bread.

Brush the top and bottom of each sandwich with oil and grill in a pan or sandwich grill (don’t press the top of the grill) until the bread is crisp and golden brown and the cheese has melted.
