| 3 | each | cucumbers | Lebanese, coarsely chopped |
| 1 | each | red onion | sliced into rings |
| 200 | grams | greek olives | marinated |
| 1 | each | capsicum | red, halved, deseeded, coarsely chopped |
| 200 | grams | feta cheese | marinated, coarsely chopped |
| 1 | teaspoon | oregano | dried greek |
| 1 | teaspoon | salt | |
| 1/2 | cup | olive oil | |
| 1/4 | cup | white vinegar |
Combine tomato, cucumber, onion, capsicum, olives and feta in a salad bowl.
Sprinkle with oregano and salt.
Whisk together the oil and vinegar in a jug.
Drizzle the salad with dressing and toss to combine.
Serve immediately.

Very easy and good. I used only green peppers and added a small, sliced onion while sauting. I also added a second can of stewed tomatos as I like more sauce and I used bowtie pasta. It's a keeper.
