| 1 | tablespoon | granulated sugar replacement | superfine, or to taste |
| 1 | quart | grapefruit juice | strained fresh, from about 8 large grapefruit, chilled |
| 1 | cup | sake | or vodka, chilled |
| 1 | x | club soda | or seltzer, chilled, as needed |
Stir 1 tablespoon sugar and 1/8 teaspoon salt into juice until dissolved.
Stir in soju and add sugar to taste.
Pour over ice in tall 8- to 10-ounce glasses (about 1/2 cup grapefruit mixture per glass) and top with a splash of club soda.

Wow! This was my first time making a cake from scratch, and boy and I glad I came across this recipe. Moist and rich I used cane sugar and added honey, and the resulting flavor was so unique and yummy! I paired it with chocolate-coconut frosting. HIGHLY RECOMMEND!
