1 hrsThis is a two-layer lemon pie that comes together fast. The bottom layer is pure cream cheese heaven: fluffy whipped cream cheese blended with sweetened condensed milk and fresh lemon juice, poured into a pre-baked crust. No baking required.
The topping is a simple stovetop lemon curd thickened with cornstarch and enriched with an egg yolk. It cooks up golden and glossy, adding a tart-sweet crown to the creamy base.
Kitchen Tips
- Beat cheese well: Whip cream cheese until completely fluffy before adding condensed milk for smooth, lump-free filling
- Fresh lemon juice only: Bottled lemon juice won’t deliver the bright, vibrant flavor this pie needs
- Stir curd constantly: Keep stirring the lemon topping as it thickens to prevent lumps and scorching
