5 minThis Godiva ice cream soda is a grown-up float that takes about 30 seconds to assemble. Chocolate cream liqueur hits the bottom of a tall glass, cola goes in for the fizz, and a scoop of vanilla ice cream sits on top melting into the whole thing.
The chocolate liqueur and cola create a surprisingly good combination. The sweetness and vanilla notes in the cola complement the rich chocolate cream, and the carbonation keeps it from feeling heavy. As the ice cream melts, it turns the drink creamy and frothy.
Pour the cola slowly. Too fast and the fizz erupts over the rim, especially when it hits the cold ice cream.
Kitchen Tips
- Use a tall glass. The ice cream floats and the fizz foams. A short glass overflows immediately.
- Pour the liqueur first, then the cola. This order lets the cola mix naturally with the liqueur. Reversing it means the heavy liqueur sinks through fizz and splashes.
- Add the ice cream last and don’t stir. Let it float and melt gradually. Stirring kills the carbonation.
- Serve with a straw and a long spoon so you can sip the drink and eat the ice cream.
