A ripe banana, orange juice, vanilla, and a pinch of cinnamon get blended smooth in a food processor, creating a thick, naturally sweet coating that clings to whole wheat bread and fries up golden.
The ripe banana is doing the job that eggs normally do. It binds to the bread, adds body, and caramelizes in the pan. Use a banana with plenty of brown spots for maximum sweetness and a smoother blend.

Omitting the bread, blend the remaining ingredient in a food processor until smooth.
Pour into a shallow pan or bowl.
Preheat a non-stick skillet or griddle over medium heat.
Oil it lightly. place bread in the bowl containing the fruit mixture and turn gently several times until it is well coated.
Place in the skillet and drizzle with any leftover mixture.
Cook until lightly cooked on both sides.
