75 minThis casserole borrows from South African bobotie tradition, mixing curry-spiced ground beef with chopped apple, dried apricots, and milk-soaked bread into a baked dish that’s savory, sweet, and warmly spiced all at once.
The bread soaked in milk acts as a binder, holding everything together while keeping the casserole moist. It dissolves into the meat mixture during baking, adding a custardy texture that you wouldn’t get from breadcrumbs alone.
Dried apricots and fresh apple might sound unusual in a beef dish, but the fruit softens during baking and adds pops of sweetness that balance the earthy curry powder. It’s a combination that works better than it sounds on paper.
Chef Tips
- Brown the beef well before combining with the other ingredients. Pale, steamed meat won’t have the depth of flavor the curry needs to build on.
- Pour off the drippings after browning. Too much grease makes the casserole oily and heavy.
- Use a firm apple like Granny Smith. Soft apples dissolve completely and you lose those distinct fruit bites.
- Let the casserole rest for 10 minutes after baking so it sets up and slices more cleanly.
Variations
- Lamb curry: Use ground lamb instead of beef for a richer, more traditional curry flavor.
- Mango chutney topping: Spread a layer of mango chutney over the top before the last 10 minutes of baking for a glossy, sweet crust.
- Raisin studded: Fold in a handful of golden raisins along with the apricots for extra dried fruit sweetness.
