This casserole borrows from South African bobotie tradition, mixing curry-spiced ground beef with chopped apple, dried apricots, and milk-soaked bread into a baked dish that’s savory, sweet, and warmly spiced all at once.

The bread soaked in milk acts as a binder, holding everything together while keeping the casserole moist. It dissolves into the meat mixture during baking, adding a custardy texture that you wouldn’t get from breadcrumbs alone.

Dried apricots and fresh apple might sound unusual in a beef dish, but the fruit softens during baking and adds pops of sweetness that balance the earthy curry powder. It’s a combination that works better than it sounds on paper.

Chef Tips

  • Brown the beef well before combining with the other ingredients. Pale, steamed meat won’t have the depth of flavor the curry needs to build on.

Directions

Cook onion and green pepper in oil in large frying-pan until onion is transparent.

Add ground beef and brown lightly.

Pour off drippings.

Soak bread in milk.

Add eggs, apple, apricots, curry powder, salt and pepper to beef.

Add bread and milk. Mix well.

Place in 2-quart oven-proof casserole; bake in a moderate oven (350 degrees F. ) for 45 minutes.

Serve with curry condiments such as chutney, raisins, shredded coconut and sunflower seeds.
