80 minThink trail mix crossed with a honey-toasted cereal bar, but in snackable handful form. This microwave snack mix coats cereal, peanuts, and banana chips in a sticky honey-cinnamon glaze, then gets tossed with popcorn, flaked coconut, and raisins once it cools.
The microwave does all the toasting here. Three to four minutes is all it takes, but you need to stir at the halfway mark and keep a close eye on it after that. Honey burns fast, and the line between golden and scorched is thin.
Let the whole batch cool for a full hour before you start snacking or storing. That’s when the honey coating sets up and everything gets that satisfying crunch. If you bag it while it’s still warm, you’ll end up with a sticky clump instead of a snack mix.
Pro Tips
- Stir at exactly the 2-minute mark and watch closely for the remaining time. Microwaves vary, and 30 extra seconds can burn the nuts.
- Use a large casserole dish so everything spreads in a thin layer. Clumped-up cereal won’t toast evenly.
- Store in an airtight container at room temperature. It keeps about a week before the popcorn starts to go stale.
Variations
- Swap raisins for dried cranberries or chopped dried apricots for a tangier bite.
- Use butter instead of margarine for a richer, more caramel-like coating.
- Add chocolate chips after the mix has fully cooled for a sweet-salty combo.
