Four ingredients (whole-berry cranberry sauce, crushed pineapple, sour cream, and chopped pecans) stir together into an ice cube tray, freeze to slice-able firmness, and come out looking like miniature works of art against turkey and ham.
The magic is the texture contrast. Frozen sour cream has a creamy ice-cream-like body, tart cranberries pop with bright acidity, and pecans hold their crunch even through the freeze. Turning the refrigerator to its coldest setting before freezing is a small detail that matters (it speeds up the initial freeze so the sour cream doesn’t separate into icy chunks).

Turn temperature control of refrigerator to coldest setting.
Thoroughly combine all ingredients.
Turn into ice-cube tray.
Freeze until just firm.
Then reset temperature controi. At serving time, if mixture is too firm, remove a few minutes ahead to warm up a bit.
Cut into slices.
