Frozen cranberry slices are a retro holiday side dish that somehow refuses to go out of style. Four ingredients (whole-berry cranberry sauce, crushed pineapple, sour cream, and chopped pecans) stir together into an ice cube tray, freeze to slice-able firmness, and come out looking like miniature works of art against turkey and ham.

The magic is the texture contrast. Frozen sour cream has a creamy ice-cream-like body, tart cranberries pop with bright acidity, and pecans hold their crunch even through the freeze. Turning the refrigerator to its coldest setting before freezing is a small detail that matters (it speeds up the initial freeze so the sour cream doesn’t separate into icy chunks).

These slices are the sleeper hit of Thanksgiving and Christmas: make them a week ahead, forget about them until dinner, then pop a slice next to each plate. They look elegant, they taste festive, and they save stove space when every burner is already at capacity.

Kitchen Tips

  • Use whole-berry cranberry sauce for texture and visual appeal. Jellied sauce turns too uniform when frozen.
  • Drain the crushed pineapple completely before stirring in. Excess juice creates ice crystals.
  • Line the ice cube tray with plastic wrap for easy unmolding. The slices pop out cleanly every time.
  • If too firm at serving time, let slices sit at room temperature 5 to 10 minutes to soften to the perfect consistency.

Directions

Turn temperature control of refrigerator to coldest setting.

Thoroughly combine all ingredients.

Turn into ice-cube tray.

Freeze until just firm.

Then reset temperature controi. At serving time, if mixture is too firm, remove a few minutes ahead to warm up a bit.

Cut into slices.
