5 hrsThis banana honey frozen yogurt is essentially a healthier homemade alternative to commercial frozen yogurt or banana ice cream. Four ingredients, no refined sugar (the bananas and honey carry the sweetness), and a method that works with or without specialty equipment.
Using very ripe bananas is the part that matters most. The brown-spotted ones are sweeter and creamier when frozen, with that pronounced banana flavor that signals real fruit. Underripe yellow bananas produce a starchy, bland frozen yogurt without the natural sweetness this recipe needs.
A tablespoon of lemon juice is the small but critical addition. The acid prevents the bananas from oxidizing and turning gray as they freeze, while also brightening the flavor and balancing the sweetness of the honey.
The re-puree step in the no-machine method is essential. Freezing the mixture once gives you ice crystals; pureeing it again breaks the crystals down into the smooth creamy texture that defines proper frozen yogurt rather than icy fruit slush.
Pro Tips
- Freeze the bananas peeled in an airtight bag overnight for the smoothest result. Pre-frozen bananas blend into a thicker, creamier texture than fresh ones.
- Use full-fat plain yogurt for richer flavor and creamier texture. Greek yogurt makes a denser, tangier version closer to gelato.
- Soften slightly before scooping. Frozen yogurt is harder than ice cream when fully frozen; let it sit at room temp 5 to 10 minutes before serving.
- Store in a shallow container with parchment paper pressed against the surface to prevent ice crystals from forming during storage.
Variations
- Swap honey for maple syrup or agave nectar depending on your sweetener preference.
- Stir in 2 tablespoons of cocoa powder with the yogurt for a chocolate banana version.
- Top with toasted walnuts, chopped dark chocolate, or a drizzle of warm peanut butter for sundae-style serving.
