15 minRefried beans from scratch take exactly three ingredients and about 10 minutes of active cooking. Cooked beans go into hot lard or bacon drippings, get mashed right in the pan, and simmer until thickened. That’s it. No canned paste, no mystery seasonings, just beans, fat, and heat.
The fat matters more than anything else here. Lard gives you the traditional, clean flavor you’d find in a Mexican kitchen. Bacon drippings add a smokier, saltier note that works especially well as a burrito filling. Either way, the fat coats every bit of mashed bean, creating that creamy, slightly glossy texture that separates good refried beans from bland ones.
Grated longhorn cheese melted on top adds a mild, stretchy cap that holds in the heat. Served alongside green chili or salsa, these become a complete side dish or the start of a seriously good burrito.
Chef Tips
- Don’t drain all the cooking liquid from the beans before mashing. A few tablespoons of bean broth helps control the consistency. Too dry and they turn stiff.
- Mash to your preferred texture. Some like it smooth, some like it chunky. Both are correct.
- Simmer after mashing for a full 5 minutes. This concentrates the flavor and tightens the texture so the beans hold their shape on a plate.
Variations
- Add a minced garlic clove and a pinch of cumin to the hot fat before the beans go in for a more aromatic version.
- Use pinto beans for the most traditional flavor, or black beans for a deeper, earthier result.
- Skip the cheese and top with crumbled cotija and a squeeze of lime for a lighter finish.
