Friendship brandied fruit is a perpetual fermented fruit compote built over months by adding peaches, pineapple, cherries, sugar, and brandy to a starter. Spoon over ice cream, pound cake, or yogurt for an instant dessert.

2This is the old-fashioned “friendship fruit” or Tutti Frutti starter that used to get passed around church socials and neighborhood gatherings along with sourdough starter. It is a living, perpetual fermentation: sugar, canned fruit, and a splash of brandy feed a starter every couple of weeks, and the jar keeps producing spoonable boozy fruit compote for years if you tend it properly.
The build is patient. Start with a brandied fruit starter (from a friend or a store-bought base), add sugar and sliced peaches for two weeks, then sugar and pineapple for two weeks, then sugar and cherries. Repeat the cycle. Once established, top off with a half ounce of brandy and fresh fruit every two months. Spoon over vanilla ice cream, plain cheesecake, or toasted pound cake for a dessert that writes itself.
Kitchen Tips
- Use a clean glass jar or ceramic crock with a loose-fitting lid, never airtight. The fermentation releases CO2 and a sealed container can build enough pressure to shatter.
- Stir with a wooden or plastic spoon, never metal. Metal utensils can react with the fermenting acids and dull the flavor.
- Use only canned or cooked fruit. Fresh fruit carries wild yeasts and bacteria that can spoil the starter. Canned peaches, pineapple, and maraschino cherries are the traditional trio for a reason.
- Keep the fruit submerged under the sugary liquid. Any fruit floating above the brine is at risk of mold. Top with more liquid if needed and stir daily for the first week.

- Split your starter and share with a friend once it hits 4 cups. This is the “friendship” in friendship fruit and keeps the tradition alive.
- Swap the brandy for dark rum or bourbon for different flavor profiles as the starter matures.
- Add a cinnamon stick and a few whole cloves for a spiced fruit version that shines at holiday desserts.

Combine brandied fruit starter with 1 cup sugar and 1 cup peaches in a large covered jar or crock.
Let stand for 2 weeks, stirring frequently.
Add 1 cup sugar, and 1 cup pineapple chunks.
Let stand for 2 weeks, stirring frequently.
Stir in 1 cup of sugar and 1 cup of cherries.
Let stand for 2 weeks. Repeat entire process.
Add ½ oz brandy. Store at room temperature, adding fruit and sugar as needed and ½ oz. brandy every 2 months.
Serve over ice cream.
