Frozen orange juice concentrate is the binding trick here. A single tablespoon coats the fruit in concentrated citrus flavor and keeps the apples and bananas from browning. It’s more effective than plain lemon juice and adds sweetness without refined sugar, making this a smart diabetic-friendly dessert option.
The fruit is flexible. Apples, bananas, oranges, and grapes make the base, but the recipe invites swaps with whatever is in season.
Chef Tips
- Blend the yogurt-ricotta sauce until completely smooth. Grainy ricotta on top of delicate fruit is not what you’re going for.
- Dice the apple and slice the banana right before mixing. Pre-cut fruit releases juice and gets soggy fast.
- Use frozen OJ concentrate straight from the freezer, not thawed. The thick, syrupy consistency coats the fruit better than liquid concentrate.

In a blender, combine yogurt, ricotta, ginger, cinnamon and vanilla.
Portion the friut into dessert bowls, top each with yogurt-ricotta sauce and garnish with a walnut half.
Other fruits may be substituted, such as melon, kiwifruit, strawberries, blueberries, pears, or pineapple.
The fruit medley may also be served without topping.
