Fluffy mashed sweet potatoes with bananas, soy milk, prune juice, and honey, baked until puffed and topped with candied ginger. Dairy-free and naturally sweet enough for dessert.

Three mashed bananas blended into two cups of mashed sweet potatoes create a fluffy, naturally sweet base that barely needs any added sweetener. Soy milk keeps it dairy-free, prune juice adds a dark, molasses-like depth, and honey rounds everything out with just three tablespoons.

The banana isn’t just filler. It acts as a natural binding agent and adds body that makes the mashed mixture hold air when beaten, which is where the “fluffy” in the title comes from. Beat until genuinely fluffy with an electric mixer. You’re incorporating air that expands during the hour-long bake, puffing the casserole up like a souffle.

Prune juice might sound unusual, but it contributes a concentrated sweetness and a deep, almost caramelized flavor that brown sugar would normally provide. Half a cup disappears into the mixture and you’d never identify it by taste alone.

Allspice is the only warming spice in the base, and it’s the right call. Sweet potatoes and bananas already bring a lot of flavor. One teaspoon of allspice ties everything together without the usual cinnamon-nutmeg-cloves pile-up that can overwhelm sweet potato dishes.

Candied ginger sprinkled on top after baking adds a spicy, sugary crunch that contrasts with the soft, pillowy interior.

Kitchen Tips

  • Use ripe bananas with brown spots. They’re sweeter and mash more smoothly
  • Beat the mixture until it’s noticeably lighter in color and texture. Underbeating means a dense, heavy casserole
  • The long bake (50-60 minutes) dries the surface slightly and creates a light crust while the inside stays creamy
  • This works as a side dish with roasted meats or as a dessert. It’s sweet enough for either role

Variations

  • Swap soy milk for coconut milk for a tropical flavor that pairs beautifully with the banana
  • Add a handful of toasted pecans alongside the candied ginger topping
  • Stir in a tablespoon of bourbon before baking for a boozy Southern twist
