| 1/2 | cup | olive oil | |
| 1/2 | cup | fennel leaves | green |
| 1/4 | cup | lemon juice | |
| 1 | each | garlic clove | peeled |
| 1 | pinch | salt | |
| 1 | pinch | sugar |
In a small saucepan, heat oil, fennel leaves, lemon juice, crushed garlic and salt and sugar.
Simmer over low heat for 5 minutes.
Pour over a bowl of sweet red onion and thinly sliced cucumber.

i tried this and it was very good but bland i did it again last night but added a little rosemary also in the inside and used a whole sprig in the sauce and took it out when it was done it was great this recipe is good but needs a little spice to it
