Forget everything you know about chicken salad. This one breaks all the American rules and comes out better for it.

There’s no mayonnaise here. Instead, you’re tossing warm poached chicken and fluffy rice in a bright balsamic vinaigrette spiked with orange juice, Dijon, and loads of fresh herbs. The tarragon brings that anise-like elegance, the chives add oniony bite, and the warm rice soaks up all that tangy dressing like a dream.

This is lighter than your typical chicken salad but just as satisfying, and it works beautifully as a make-ahead lunch since the flavors only get better as they mingle. Serve it warm or at room temperature, never cold.

Directions

Poach chicken in broth or water for about 20 minutes.

In salad bowl combine vinegar, juice, and mustard.

Gradually whisk in oil. Stir in chives and tarragon and season with salt and pepper.

Cut chicken into bite sized pieces.

Add chicken and rice to dressing. Toss well.
