10 minThese microwave quesadillas are the answer to “what can I make in 10 minutes that actually tastes good?" Spread refried beans on a flour tortilla, pile on a shredded Mexican cheese blend, drizzle on taco sauce, top with another tortilla, and zap. That’s it.
The microwave approach works because the goal here is melted cheese, not a crispy tortilla. A paper towel over the quesadilla absorbs moisture so you don’t end up with a soggy disc. Ninety seconds on high is the sweet spot. The cheese goes gooey, the beans warm through, and the tortillas stay pliable enough to hold everything without tearing.
Refried beans with sausage are the move here if you can find them. They add a savory, smoky backbone that plain refried beans lack. If you can’t find them, use regular refried beans and sprinkle in cooked chorizo or taco-seasoned crumbles.
Cut each quesadilla into 8 wedges and serve with extra shredded cheese, more taco sauce, and light sour cream for dipping. Perfect for after-school snacks, game-day spreads, or emergency dinner-for-kids situations.
Kitchen Tips
- Spread beans edge to edge so every bite has filling. Bare center bites taste like microwaved bread.
- Use the paper towel. Without it, the tortilla steams and turns rubbery instead of soft.
- For a crispy version, skip the microwave and cook in a dry skillet over medium heat for 2 minutes per side.
- Let cool 1 minute before cutting. Hot cheese oozes out when you cut too soon and makes a mess.
Variations
- Add cooked shredded chicken or ground beef for a heartier meal.
- Swap Mexican cheese for a mix of sharp cheddar and pepper jack.
- Include sliced jalapeños, black olives, or chopped green onions inside for more flavor.
