Ground beef browned and simmered with uncooked noodles, tomato sauce, and onion soup mix in one pot. No stirring until the end. American-style goulash that practically cooks itself.

This is the weeknight dinner your grandma probably made, and for good reason. It’s nearly foolproof.

Brown the ground beef, sprinkle dry noodles right on top, pour tomato sauce mixed with water and onion soup mix over everything, and then do the hardest part: don’t stir.

Seriously. Put the lid on, bring it to a boil, drop to a simmer, and walk away for 30 minutes.

The noodles cook right in the sauce, soaking up all that beefy, tomatoey flavor while the onion soup mix handles the seasoning.

One stir at the end, a sprinkle of parsley, and dinner is served.

Kitchen Tips

  • Don’t stir until the end. The noodles need to sit on top of the meat so they steam-cook in the sauce. Stirring early leads to uneven cooking and sticking.
  • Use lean ground beef. Drain the fat after browning so the sauce doesn’t get greasy.
  • Check liquid levels. If the noodles look dry before they’re tender, add a splash more water and keep the lid on.
