Rich, creamy homemade fudge with semi-sweet chocolate, marshmallow cream, and chopped walnuts. Chills to a smooth, melt-in-your-mouth square in about an hour. Try the mocha almond variation too!

80 minOld-school fudge making at its simplest. No candy thermometer needed, no tricky soft-ball stage to nail. Just melt, stir, pour, and chill.
Semi-sweet chocolate meets marshmallow cream and butter for a fudge that’s dense, smooth, and snaps cleanly when you bite through to those crunchy walnut pieces tucked inside.
The recipe also includes a killer mocha almond variation: swap walnuts for toasted almonds and stir in a couple teaspoons of instant coffee. Suddenly you’ve got a fudge that tastes like it came from a fancy confectionery shop.
Variations
- Mocha Almond Fudge: Replace walnuts with chopped toasted almonds and add 2 teaspoons instant coffee powder to the sugar-milk mixture
- Peanut Butter Swirl: Drop spoonfuls of creamy peanut butter onto the fudge before chilling and swirl with a knife
Pro Tips
- Chop the chocolate into small, even pieces so it melts smoothly when the hot sugar mixture hits it
- Stir constantly once the sugar and milk start boiling to prevent scorching on the bottom of the pan
- Line the pan with parchment paper for easy removal and clean-cut squares
- Store in an airtight container in the fridge for up to two weeks, if it lasts that long

- Place chopped chocolate in a bowl with marshmellow topping, 2. Combine sugar and evaporated milk in a 2-quart saucepan; cook and stir over minutes, stirring constantly.
- Carefull pour boiling sugar-milk mixture over chocolate mixture and stir until chocolate is melted. Pour into a buttered 8-inch square pan. Chill until firm; about one hour. Cut into squares. Makes 1½ lbs. 3 doz pieces Mocha Almond Fudge: Prepare Dorchester Fudge as directed; using chopped, toasted almonds for the walnuts and adding 2 teaspoons instant coffee powder to the sugar-milk mixture.
