Leftover turkey gets tossed in a skillet with soy sauce, stewed tomatoes, raisins, pineapple chunks, and vermicelli for a sweet-savory one-pan dinner that shouldn’t work but absolutely does.

Heat oil in a large, heavy skillet.
Add onions and celery and sauté until onions start to turn trans- luscent.
Add turkey, raisins, tomatos, soy sauce and vermicelli.
Stir well and cover.
Cook for 5 minutes then add the raisins.
Cook covered for 5 more minutes and serve.
