| 1/2 | cup | sweet red bell pepper | diced |
| 1/2 | cup | scallions, spring or green onions | chopped |
| 2 | tablespoons | coriander | fresh |
| 1 | each | lime | |
| 1/4 | teaspoon | cumin | ground |
| 1/4 | teaspoon | chili powder | |
| 1/4 | teaspoon | salt | |
| 3/4 | cup | black beans | |
| 1 | pinch | red pepper flakes | * |
| 1 1/2 | cups | lettuce | shredded |
| 2 | tablespoons | peanuts | |
| 2 | each | flour tortillas | * |
1. Combine tomatoes, red pepper, scallions, coriander and 2 tsp lime juice, lime zest, cumin, chili powder salt and red pepper flakes.
2. Stir in black beans and set aside.
3. Warm tortillas one at a time in a hot skillet.
4. Top with shredded lettuce, spoon on tomato mixture and sprinkle with peanuts.
