Ingredients

3/4cup tomatoes diced
1/2cup sweet red bell pepper diced
1/2cup scallions, spring or green onions chopped
2tablespoons coriander fresh
1each lime
1/4teaspoon cumin ground
1/4teaspoon chili powder
1/4teaspoon salt
3/4cup black beans
1pinch red pepper flakes *
1 1/2cups lettuce shredded
2tablespoons peanuts
2each flour tortillas *

Directions

1. Combine tomatoes, red pepper, scallions, coriander and 2 tsp lime juice, lime zest, cumin, chili powder salt and red pepper flakes.

2. Stir in black beans and set aside.

3. Warm tortillas one at a time in a hot skillet.

4. Top with shredded lettuce, spoon on tomato mixture and sprinkle with peanuts.
