| 3/4 | pound | beef round steak | boneless, trimmed and cubed |
| 1 | tablespoon | vegetable oil | |
| 4 | medium | potatoes | peeled, cut into 1 inch cubes |
| 5 | medium | carrots | cut into 1 1/2 inch chunks |
| 1 | each | celery stalks | cut into 1 inch chunks |
| 1 | large | onion | cut into 1 inch chunks |
| 14 1/2 | ounces | tomatoes, stewed, canned | |
| 3 | tablespoons | tapioca | quick cooking |
| 1 | teaspoon | browning sauce | |
| 1 | x | black pepper | |
| 1 | cup | green peas | frozen |
In a Dutch oven, brown the steak in oil.
Add the next eight ingredients; cover and bake at 300 degrees for 4-5 hours, stirring twice.
Add the peas during the last 30 minutes of baking.

This recipe made my dinner not only delicious but also so simple. I switched sugar for brown sugar on the rub (which is what makes this dish so wonderful). I skipped making the sauce for a bottled version to save time. I never cooked a rack before because I thought it was so difficult to cook. My deli just lost a customer buying racks of ribs; Now, I can do it on my own.
