| 1 | cup | water | |
| 2 | large | eggs | jumbo |
| 1 | cup | raisins, seedless | |
| 1 | cup | sugar | or artificial sweetener |
| 1 | cup | applesauce | unsweetened |
| 3/4 | cup | vegetable oil | |
| 1 | teaspoon | baking soda | |
| 1/4 | teaspoon | cinnamon | |
| 1/2 | teaspoon | nutmeg | |
| 1 | teaspoon | vanilla extract | |
| 1/2 | teaspoon | salt | |
| 1 1/2 | cups | flour, all-purpose |
Cook raisins until soft.
Drain water and raisins to applesauce and eggs, sweetener, cooking oil.
Mix well, blend baking soda flour and remaining ingredients.
Bake 350 Degrees in 8 x 8 inch or 9 x 9 inch pan until cake texture achieved.

This is a wonderful cake recipe. Actually this is the first diabetic cake recipe that I could get to achieve the proper cake texture with. This cake is very moist, especially with the raisins in it. I have adapted it to make a chocolate cake using this recipe as a base, adding cocoa. It turned out good as well.

It makes much more than 2 servings. I made 6 large muffins and they are yummy! I used one for a breakfast in a hurry.

Helpful hints on how to handle Phyllo or Filo dough when making those delicate recipes....
This is a family favorite. Instead of loaves of bread I use Rhodes Dinner rolls (24) I cut each roll in half and roll it in dry pudding mix. The COOK and SERVE pudding works the best. I melt the brown sugar and butter together and pour over the top. I also use a bundt pan it looks beautiful served on a platter. YUM! Thanks for sharing.
