Deviled Crab Croquettes

Crab croquettes made with mashed potatoes, chopped hard-boiled eggs, green pepper, and Old Bay seasoning, rolled in cracker meal and deep-fried golden. Ready in 30 minutes.

Crab cakes are good. Crab croquettes are better.

Mashed potatoes hold everything together instead of breadcrumbs, giving these a creamy, soft center that contrasts with the crunchy cracker meal coating. Chopped hard-boiled eggs, sautéed green pepper, parsley, and a generous shake of Old Bay round out the filling.

Shape them, roll them, fry them. Golden brown on the outside, tender and crabby on the inside. Done in half an hour.

Pro Tips

  • Use cold mashed potatoes so the mixture is firm enough to shape. Warm potatoes will make the croquettes too soft to hold together
  • Sauté the green pepper before adding it to the mix. Raw pepper releases moisture during frying and can cause the croquettes to fall apart
  • Don’t crowd the fryer. Cook a few at a time so the oil stays hot and the coating crisps evenly
  • Serve with tartar sauce, remoulade, or a squeeze of lemon

Directions

Sauté chopped green pepper and parsley and set aside.

Combine crab meat, mashed potatoes, seasonings, chopped egg, green pepper and parsley, and beaten egg.

Shape into croquettes, roll in cracker meal and deep fry until golden brown.
