Traditional German-style beef patties made with ground beef and a soaked bread roll for tenderness, pan-fried and topped with browned onion rings. Simple, hearty, and ready in 30 minutes.

Deutsches Beefsteak is what happens when a hamburger goes to Germany and learns a thing or two about technique.

A dry bread roll gets soaked in water, squeezed out, and mixed into the ground beef along with browned onions. That soaked bread is the old German trick for keeping the patties incredibly moist and tender on the inside while they develop a solid sear on the outside.

Fry the patties in the same pan, then cook sliced onions in the drippings until they’re golden and sweet. Pile those onion rings right on top.

Simple food, done right.

Chef Tips

  • Squeeze as much water out of the soaked roll as possible. Excess moisture will make the patties fall apart in the pan
  • Don’t overwork the meat mixture. Mix just until the bread and onions are evenly distributed
  • Cook the onion rings in the pan drippings after the patties are done. All that beef flavor goes straight into the onions
  • Serve with boiled potatoes or a simple green salad for a traditional German dinner

Directions

In a small bowl soak roll in water.

Heat 2 tablespoons of vegetable oil in a frying pan; cook chopped onion until lightly browned.

Transfer onion to a bowl.

Squeeze roll as dry as possible and mix roll with onion.

Add ground beef; blend well.

Season with salt and pepper. Shape meat in 4 patties; cook about 5 minutes on each side or to desired.

Remove and keep warm.

Add sliced onions to pan drippings; cook until lightly browned.

Arrange beefsteaks on a platter and top with onion rings.
