1 hrsWhen you need a dip for the party but you’re watching what you eat, desperation breeds genius.
Low-calorie cottage cheese gets stirred up with minced garlic, fresh parsley, a splash of white wine vinegar, a single tablespoon of mayo, and a hit of Italian seasoning. That’s it.
Let it chill in the fridge for at least an hour (overnight is even better) so the flavors bloom and the garlic mellows out. A sprinkle of paprika on top for color, and you’ve got a dip that looks intentional, not improvised.
Serve it with raw cauliflower, celery sticks, or whatever crunchy vegetables you have on hand.
Pro Tips
- Blend the mixture smooth if you want a creamier dip for raw vegetables. Left chunky, it works more like a spread
- Letting it sit overnight makes a noticeable difference in flavor. The garlic softens and everything melds together
- The cottage cheese container doubles as a storage vessel. Mix it right in there and pop it back in the fridge
Ingredients
Directions
Mix all the ingredients together (you can even beat this mixture until smooth if you’re going to be dipping things like cauliflower in it).
Replace in the cottage cheese container.
Cover and refrigerate for at least an hour and preferably overnight.
At party time, remove from refrigerator and serve either picnic-style in the cottage cheese container or put in a bowl for serving.
Sprinkle a bit of paprika on the top for color.
