When you need a dip for the party but you’re watching what you eat, desperation breeds genius.

Low-calorie cottage cheese gets stirred up with minced garlic, fresh parsley, a splash of white wine vinegar, a single tablespoon of mayo, and a hit of Italian seasoning. That’s it.

Let it chill in the fridge for at least an hour (overnight is even better) so the flavors bloom and the garlic mellows out. A sprinkle of paprika on top for color, and you’ve got a dip that looks intentional, not improvised.

Serve it with raw cauliflower, celery sticks, or whatever crunchy vegetables you have on hand.

Pro Tips

  • Blend the mixture smooth if you want a creamier dip for raw vegetables. Left chunky, it works more like a spread
  • Letting it sit overnight makes a noticeable difference in flavor. The garlic softens and everything melds together
  • The cottage cheese container doubles as a storage vessel. Mix it right in there and pop it back in the fridge
