Five ingredients and about 15 minutes stand between you and the kind of sleek, glossy chocolate glaze that makes a cake look like it belongs in a patisserie window.

Dark chocolate melts with butter until silky, then milk, corn syrup, and vanilla get stirred in. The corn syrup is the trick. It gives the glaze that professional shine and keeps it from cracking as it sets.

Pour it over the center of your cake and let gravity do the work. A spatula smooths the sides, chopped almonds or walnuts get pressed in for texture, and a quick chill in the fridge locks it all in place.

Baker’s Tips

  • Let the glaze cool slightly before pouring. Too hot and it runs right off the cake in a puddle.
  • Work quickly once you start pouring. The glaze firms up fast and reheating it can make it grainy.
  • Place a baking sheet under the wire rack to catch the drips. Less mess, and you can scrape up the excess.
  • Use the best dark chocolate you can find. The glaze is mostly chocolate, so quality shows.

Directions

DIRECTIONS: In small, heavy saucepan or microwave oven on medium, melt broken chocolate with butter.

Stir frequently until smooth.

Remove from heat.

Stir in milk, syrup and vanilla.

Place 9 inch cake layer on rack over a baking sheet.

When glaze is cool, pour onto center of cake.

Let glaze run down sides.

Use spatula to smooth glaze and coat sides.

Decorate side of cake with nuts.

Chill about 10 minutes to set glaze.
