Real pumpernickel gets its dark color and deep flavor from a combination of rye flour, cocoa powder, dark molasses, and instant coffee granules. This bread machine version captures all of that without any kneading or babysitting.

Three flours work together here: bread flour for structure, rye flour for that signature tang, and whole wheat for earthiness. Cornmeal adds a subtle grit that gives each slice some texture.

Just load the ingredients into the machine in the right order and press start. A few hours later, your kitchen smells like a European bakery.

Kitchen Tips

  • Follow your bread machine’s recommended ingredient order. Most go liquids first, then dry, then yeast on top.
  • Caraway seeds are optional but traditional. They add that classic deli rye aroma.
  • The cocoa and coffee aren’t for flavor you can taste outright. They deepen the color and add complexity to the bread.
  • Let the loaf cool completely before slicing. Warm pumpernickel is gummy and hard to cut cleanly.
