This one bends the rules in the best way. Pizza dough gets loaded with a mix of diced apples, pears, banana, grapes, and candied pineapple, all simmered together in heavy cream spiked with curry powder until soft and saucy.

The curry does something sneaky to the fruit. That warm, earthy spice tempers the sweetness and adds a savory backbone you wouldn’t expect. When the cream absorbs into the fruit during that low simmer, you end up with a thick, fragrant topping that caramelizes on the crust as it bakes.

Starting at a high oven temp crisps the bottom of the dough fast, then dropping the heat lets the topping finish without burning. You want a golden, crunchy crust underneath that soft, jammy fruit layer.

Pro Tips

  • Dice all the fruit to a uniform ½-inch size so everything cooks at the same rate in the cream. Bigger pieces of apple will still be firm when the banana is mush.

Directions

Make the pizza dough.

Preheat an oven to 450F. If using a baking stone or tiles, place in the oven now.

Place all the fruits in a saucepan.

Pour in the cream and gently stir in the curry powder.

Cover and cook over low heat until the fruits are soft and the cream is absorbed, about 15 minutes.

Roll out the pizza dough and cover with the fruit mixture.

Transfer the pizza to the oven and bake for 10 minutes.

Reduce the temperature to 400℉ (200℃) and bake until the crust is golden, about 10 minutes.

Serve immediately.
