No-bake cinnamon s’mores bars with chocolate-coated honey graham cereal and gooey marshmallows. Made in the microwave in minutes, set in an hour, and vanish even faster.

S’mores without the campfire and twice the crunch.

Chocolate chips melt with corn syrup, butter, vanilla, and cinnamon in the microwave. Honey graham cereal gets folded in until every piece is coated in glossy, spiced chocolate. Mini marshmallows go in last so they stay puffy and gooey instead of melting completely.

Press it all into a pan, wait an hour, and cut into squares.

These are the kind of treats that kids demolish at bake sales and adults sneak from the counter when nobody’s watching.

Kitchen Tips

  • Fold the marshmallows in gently and quickly. The chocolate mixture is hot enough to melt them if you stir too long
  • Butter the back of your spoon before pressing the mixture into the pan. It won’t stick
  • Use a greased knife to cut clean squares once the bars have fully set
  • Store at room temperature in an airtight container. The fridge makes the chocolate coating lose its snap

Directions

Mix first five ingredients in a 3 quart casserole dish.

Cover tightly and microwave on high to boiling, approx. 2½ to 3 minutes depending on wattage of microwave and then stir.

Fold in cereal until completely coated with chocolate.

Fold in marshmallows.

Press mixture evenly with buttered back of spoon in a greased 9×9 inch baking pan.

Let stand at room temperature about 1 hour.

Cut into about 2 inch squares.
