10 minLighter and brighter than the usual mayo-bound bowl, this chicken salad leans on a tangy yogurt dressing spiced with curry and sweetened with a little honey, no heavy mayonnaise in sight. It is a smart way to turn leftover cooked chicken and rice into a fresh, satisfying meal.
The combination hits a lot of notes at once: tender chicken, fluffy rice, juicy mandarin oranges for sweetness, and red onion and celery for sharp, crisp contrast.
Chilling the components separately, then dressing them just before serving, keeps everything from going soggy and lets the flavors stay distinct and fresh.
The curry powder is what ties it together, a warm, gently spiced backdrop that plays beautifully against the sweet oranges and honey.
A handful of peanuts scattered on top right before serving adds that signature crunch. Serve it over greens, scooped into pita, or straight from the bowl for an easy lunch.
Kitchen Tips
- Dress the salad just before serving so the rice and chicken don’t get soggy and the peanuts stay crunchy.
- Toast the curry powder briefly, or let the dressing sit, to mellow its raw edge and deepen the flavor.
- Use day-old cold rice; it holds its texture better than warm, freshly cooked rice.
- Drain the mandarin oranges well so the dressing doesn’t turn watery.
Variations
- Add raisins, dried cranberries, or grapes for more sweetness.
- Swap the peanuts for toasted almonds or cashews.
- Stir in a little mango chutney for extra Indian-inspired flavor.
