| 1 | tablespoon | olive oil | |
| 4 | each | garlic cloves | crushed |
| 1 | each | onion | chopped |
| 1 | each | sweet red bell pepper | red pepper, chopped |
| 1 | each | green bell pepper | chopped |
| 1 | each | zucchini | chopped |
| 1 | each | mushrooms, canned | |
| 28 | ounces | tomatoes, canned | stewed, italian style |
| 6 | ounces | tomato paste | one can |
| 1/4 | pound | hot sausage | |
| 2 | each | chicken breasts | |
| 1 | teaspoon | italian seasoning | |
| 1 | dash | red pepper flakes | optional |
Heat oil in skillet. Sautee onion and garlic until light brown. Remove. Add sausage and chicken to brown in the skillet. Drain and pat dry. In crockpot combine all other ingredients together with the onions and garlic. Add the sausage then top with the chicken breasts. Cover and cook on low setting 6-8 hrs.

Excellent, the flesh simply falls off the bone, unbelievably tender and the dry spice rub makes for a crispy very tasty skin. One of the best roast chicken I have ever made.
