Honey, white Worcestershire sauce, and ground ginger get whisked into a glaze that caramelizes into a lacquered, crackling shell as you brush it on layer after layer over the coals.

Kitchen Tips
- Brush frequently during grilling. Each coat builds another layer of that sticky, caramelized crust.
- Medium coals, not screaming hot. Honey burns fast, so you need moderate heat to caramelize without charring.
- Flip once at the halfway mark and keep basting. Resist the urge to move them around constantly.
- White Worcestershire has a lighter, tangier flavor than regular. If you can’t find it, regular works but the wings will taste slightly different.
