50 minClassic rice crispy treats get a s’mores upgrade with graham cracker crumbs mixed into the cereal. The crumbs add a toasty, honey-wheat flavor and a slightly sandy texture that makes these more interesting than the standard version.
Melting the marshmallows low and slow is everything. High heat scorches them and turns the mixture brown and bitter. Pull the pan off the burner entirely if they start sticking or browning. Constant stirring and patience give you a smooth, stretchy base that coats every piece of cereal evenly.
Spraying the spoon with cooking spray before pressing the mixture into the pan is a smart trick from this recipe. Marshmallow sticks to everything, and a greased spoon lets you press the treats flat without tearing them apart or gluing your hand to the pan.
Kitchen Tips
- Don’t press too hard when flattening. Light, gentle pressure keeps the treats airy and chewy. Compacting them makes dense, hard bars.
- Let them cool a full 20 to 30 minutes before cutting. Warm treats tear and crumble instead of slicing cleanly.
- Spray the baking dish generously with cooking spray. Even a little marshmallow residue makes removal a sticky fight.
- Work quickly once the cereal is mixed in. The marshmallow starts setting as it cools, and if you wait too long it hardens in the bowl.
Variations
- Drizzle melted chocolate over the cooled treats for a full s’mores experience.
- Use chocolate crispy rice cereal instead of regular for a double-chocolate version.
- Fold in mini chocolate chips right after mixing the cereal into the marshmallow.
