Ingredients

1 1/2 cups cottage cheese (low-fat 1%)
3 ounces neufchatel cheese
1/3 cup sugar or less
1 teaspoon vanilla extract
1 tablespoon lemon juice fresh squeezed
1/2 teaspoon lemon zest
1 tablespoon canola oil
1 cup yogurt, non-fat
4 cups fruit or berries, sliced
2 tablespoons powdered sugar or less

Directions

Crepes with a cheese filling which are lightly browned and served warm with fresh fruit or other toppings.

Prepare crepes .

Mix cottage cheese, Neufchatel cheese, sugar, vanilla, lemon juice and zest.

Fill each crepe. Fold. Saute in oil until slightly browned.

Serve with non-fat yogurt, fresh berries or fruit and sprinkle with powdered sugar.

Broccoli Salad with Bacon

I use this recipe and it is really quite good, even with the golden raisins. I use balsamic vinegar. I like to reserve some of the dressing to add right before serving to make it a little creamier. Also, I prefer to dice my cheese.
