15 minThis is the kind of throwback dessert that deserves a comeback.
Crushed pineapple gets simmered with sugar and corn syrup until glossy and translucent, then spiked with creme de menthe for a cool, minty kick.
Layer that bright green sauce with vanilla ice cream in tall glasses, and you’ve got a showstopper that takes all of 15 minutes to pull together.
It’s retro, it’s fun, and it tastes like a tropical mint dream.
Kitchen Tips
- Let the sauce cool completely before layering, or it will melt the ice cream into soup
- Use green creme de menthe for the classic parfait color contrast
- Swap vanilla for chocolate ice cream to turn this into a grasshopper-style parfait
