Start with a buttery, chocolate chip cookie dough spread into a jelly roll pan. From there, pick your adventure: Granola Nut with raisins and walnuts, Apricot Cashew with dried fruit and roasted nuts, Apple Oatmeal with cinnamon and diced apple, or Carrot Pineapple with warm spices and wheat germ.
Each variation bakes in about 20 minutes and cuts into 35 bars. That’s a full cookie jar from one batch.
Variations
- Granola Nut: Add 2 cups granola, 1 cup raisins, and 1 cup chopped walnuts to the base dough.
- Apricot Cashew: Add 2 cups granola, 1 cup dried apricots, and 1 cup chopped roasted cashews.
- Apple Oatmeal: Reduce flour to 2 cups. Add 2 ¼ cups quick oats, 1 cup diced apple, and ¾ teaspoon cinnamon.
- Carrot Pineapple: Increase flour to 2 ¾ cups. Add grated carrots, drained crushed pineapple, wheat germ, cinnamon, allspice, and nutmeg.
Pro Tips
- Spread the dough evenly across the pan for uniform thickness. Uneven dough means some bars will be overbaked while others are underdone.
- Let the pan cool completely before cutting. Warm bars crumble and fall apart.
- These freeze well individually wrapped. Pull one out for lunchboxes or afternoon snacks.

Directions
Preheat oven to 375℉ (190℃).
In bowl, combine flour, baking soda and salt; set aside.
In bowl, beat butter, sugars and vanilla until creamy.
Beat in eggs.
Gradually add flour mixture.
Stir in chocolate chips and ingredients for whatever type cookie you want to make.
Spread into ungreased 15×10 inch jelly roll pan.
Bake 18 to 20 minutes.
Cut into 35 bars when cooled.
